Access Hollywood Live: Chef Geno Bernardo’s Spaghetti Nove Recipe

Chef Geno Bernardo from Nove Italiano atop the Palms Casino Resort’s Fantasy Tower stopped by Access Hollywood Live to show Billy Bush and Kit Hoover his secret recipe for his signature entrée – Spaghetti Nove.

Ingredients:
8 oz cooked linguine
6 oz lobster, tomato, saffron, marinara
26-30 shrimp
2 oz jonah crabmeat
1 pound maine lobster tail, claw, elbow (with tail shell)
4 each little neck clams and manilla clams
2 oz Calamari
8 Mussles
1/2 cup basil leaves
3/4 cup celery, fennel, leek batons
3 oz butter
1/2 cup dry white wine

For the seafood mariniara:
Add to 1 qt tomato basil marinara
1 cup reduced lobster stock
1 tsp toasted saffron
1 tsp fennel seed, toasted and ground
2 sprigs rosemary
1/4 cup chopped parsley

Method:
1. In a small pot steam the mussels and clams in the wine
2. In a large skillet saute the shrimp and calamari
3. Add the lobster, mussels, clams and sauce
4. Add the basil, vegetables, butter and linguine
5. Season to taste and serve family style topped with crabmeat
