For many Americans, Super Bowl Sunday is one of the most exciting events of the year! But, along with game day typically comes lots of high calorie treats. The average football fan scarfs down 1,200 calories during the festivities. Registered dietician and contributor to Women’s Health magazine, Keri Glassman, shared on Access Hollywood Live a few of her healthier game day recipes.
Keri Glassman’s Super Bowl Recipes (Access Hollywood)
Loaded Potato Skins
Ingredients:
- 4 medium sweet potatoes
- 1 tsp. olive oil
- Salt and pepper, to taste
- 1 cup broccoli
- 1 cup red peppers
- 1 cup red onions
- 1 cup mushrooms cut into bite sized pieces
- 1-1/2 cups shredded sharp cheddar cheese
- 1/4-1/3 cup crispy crumbled bacon
Directions:
Preheat oven to 400 degrees F. Pierce each sweet potato a few times and bake for about 40 minutes until soft. .At the same time, lay all other veggies on tray and roast until slightly brown.
When potato ready take out of oven and let cool slightly and cut in half. Scoop out flesh and lay on baking tray. Rub the inside of the potato skins with just a drop of oil and bake for about 10 minutes to slightly harden the shell. Remove from the oven and fill each potato skin with the mashed sweet potatoes. Fill each potato with equal amounts mixed veggies. Top with cheddar cheese and bake for approximately another 10 minutes.

Crispy Cauliflower Buffalo Wings
(serves 4)
Ingredients:
- 1 head cauliflower, chopped into bite size pieces
- 1 cup almond meal
- 1 cup water
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1 tsp. olive oil or melted butter
- 2/3 cup hot sauce or 2 tsp. cayenne pepper
Directions:
Preheat oven to 450F. In a medium size bowl, combine flour, water, onion powder, garlic powder and salt and mix until smooth. Toss cauliflower into bowl and coat each piece thoroughly.
Place battered cauliflower on a lightly greased, baking sheet and bake for 15 minutes, tossing halfway through. In meantime, combine oil and cayenne in a large bowl. When cauliflower is done, remove it from the oven and gently toss it in the hot sauce mixture. .Place cauliflower back on the baking sheet and cook for an additional 20 minutes or until it becomes crispy. Allow cauliflower to cool and serve with your Greek yogurt.

Chili Shots
Ingredients:
- 1 tbsp. olive oil
- 1 onion, chopped
- 1 1/2 pounds lean ground grass fed beef or turkey
- 1 small green bell pepper, chopped
- 1 small red bell pepper, chopped
- 2 garlic cloves, minced
- 2 (16-ounce) cans red kidney beans, rinsed and drained
- 1 (16-ounce) can chickpeas, rinsed and drained
- 2 (14-ounce) cans diced tomatoes
- 2 tbsp. chili powder
- 1 tsp. cayenne pepper
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. ground cumin
- 1 cup sharp cheddar cheese, shredded
Directions:
Add oil to large cooking pot and heat. Then, add onions and cook until they begin to be translucent. Add beef, peppers and garlic and cook over medium-high heat, stirring until beef crumbles and is no longer pink; drain.
Stir in beans and remaining ingredients. Cook at HIGH 3 to 4 hours or at LOW 5 to 6 hours. Serve in 2 oz. shot glasses and top with teaspoon of cheese.
